Description

Amish Potato Salad is a creamy, tangy, and classic side dish featuring tender potatoes, hard-boiled eggs, celery, and a flavorful dressing. It’s a beloved comfort food perfect for picnics, barbecues, and family gatherings.


Ingredients

  • 3 lbs red potatoes, peeled and cubed
  • 4 large hard-boiled eggs, chopped
  • 2 celery stalks, diced
  • 1 small onion, finely chopped
  • 1 cup mayonnaise
  • 2 tbsp apple cider vinegar
  • 1 tbsp yellow mustard
  • 1 tsp sugar
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Place cubed potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook until potatoes are tender but firm, about 10–15 minutes. Drain and let cool slightly.
  2. In a large bowl, combine mayonnaise, apple cider vinegar, yellow mustard, sugar, salt, and pepper. Mix well to make the dressing.
  3. Add the warm potatoes to the dressing and gently toss to coat.
  4. Fold in chopped hard-boiled eggs, celery, and onion until evenly distributed.
  5. Chill the potato salad in the refrigerator for at least 2 hours before serving to allow flavors to meld.
  6. Garnish with fresh parsley if desired and serve cold.

  • Use red potatoes to keep the salad creamy and less mushy.
