Ingredients
Scale
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup cold unsalted butter, cubed
- 1/2 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- 1 medium apple, peeled and diced
- 1/2 cup raisins
- 1 tablespoon turbinado sugar (optional, for topping)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
- Add the cubed butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.
- In a separate small bowl, whisk together milk, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- Fold in the diced apple and raisins.
- Turn the dough onto a lightly floured surface and gently knead it 2-3 times until it comes together. Pat the dough into a circle about 1 inch thick.
- Using a sharp knife, cut the dough into 8 wedges and place them on the prepared baking sheet.
- If desired, sprinkle the top of the scones with turbinado sugar for a crunchy finish.
- Bake for 18-22 minutes, or until the scones are golden brown and a toothpick inserted comes out clean.
- Let the scones cool on a wire rack before serving.
Notes
- For a richer flavor, substitute heavy cream for the milk.
- Use honeycrisp or granny smith apples for the best texture and flavor.
- Store leftovers in an airtight container at room temperature for up to 2 days.
