Description

Apple Cinnamon Raisin Scones are warm, flaky, and sweet treats with the perfect balance of spiced apples, raisins, and a hint of cinnamon. These scones are perfect for breakfast or a cozy afternoon snack.


Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 medium apple, peeled and diced
  • 1/2 cup raisins
  • 1 tablespoon turbinado sugar (optional, for topping)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. Add the cubed butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.
  4. In a separate small bowl, whisk together milk, egg, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  6. Fold in the diced apple and raisins.
  7. Turn the dough onto a lightly floured surface and gently knead it 2-3 times until it comes together. Pat the dough into a circle about 1 inch thick.
  8. Using a sharp knife, cut the dough into 8 wedges and place them on the prepared baking sheet.
  9. If desired, sprinkle the top of the scones with turbinado sugar for a crunchy finish.
  10. Bake for 18-22 minutes, or until the scones are golden brown and a toothpick inserted comes out clean.
  11. Let the scones cool on a wire rack before serving.

Notes

  • For a richer flavor, substitute heavy cream for the milk.
  • Use honeycrisp or granny smith apples for the best texture and flavor.
