- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1 cup unsalted butter, cold and cubed
- 3 cups peeled and chopped apples (Granny Smith or Honeycrisp)
- 1/2 cup brown sugar
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1/4 cup rolled oats (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
- In a large bowl, combine flour, granulated sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs.
- Press about two-thirds of the crust mixture into the prepared pan to form the base.
- In another bowl, toss apples with brown sugar, cinnamon, lemon juice, and vanilla extract.
- Spread the apple mixture evenly over the crust.
- Crumble the remaining crust mixture over the apples, optionally mixing in rolled oats for extra texture.
- Bake for 45-50 minutes until the top is golden and apples are tender.
- Allow to cool completely before cutting into bars.

- Use tart apples for a balance of sweetness and acidity.
- Store bars in an airtight container at room temperature for up to 3 days.
- Serve warm with a scoop of vanilla ice cream for an extra treat.
