Description

These apple pie bars feature a buttery shortbread crust, a sweet spiced apple filling, and a crumbly streusel topping — like apple pie in handheld form.


Ingredients

  • For crust: 1 cup unsalted butter (softened), 1/2 cup granulated sugar, 2 cups all-purpose flour, 1/4 teaspoon salt
  • For filling: 4 cups peeled, diced apples (Granny Smith or Honeycrisp), 1/2 cup granulated sugar, 1/4 cup brown sugar, 2 tablespoons all-purpose flour, 1 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, 1 tablespoon lemon juice
  • For streusel: 1/2 cup rolled oats, 1/3 cup brown sugar, 1/3 cup all-purpose flour, 1/2 teaspoon cinnamon, 1/4 cup cold butter (cubed)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper.
  2. To make the crust, mix butter, sugar, flour, and salt until crumbly. Press into the bottom of the pan and bake for 15 minutes.
  3. In a bowl, toss diced apples with sugars, flour, cinnamon, nutmeg, and lemon juice.
  4. Spread apple mixture evenly over the pre-baked crust.
  5. For the streusel, mix oats, brown sugar, flour, and cinnamon. Cut in butter until mixture is crumbly. Sprinkle over the apples.
  6. Bake for 35–40 minutes or until topping is golden and apples are tender.
  7. Let cool completely before slicing into bars. Serve as is or with a scoop of vanilla ice cream.

  • Use tart apples like Granny Smith for best flavor balance.
  • Bars can be stored in the fridge for up to 5 days.
