Description
These apple pie bars feature a buttery shortbread crust, a sweet spiced apple filling, and a crumbly streusel topping — like apple pie in handheld form.
Ingredients
- For crust: 1 cup unsalted butter (softened), 1/2 cup granulated sugar, 2 cups all-purpose flour, 1/4 teaspoon salt
- For filling: 4 cups peeled, diced apples (Granny Smith or Honeycrisp), 1/2 cup granulated sugar, 1/4 cup brown sugar, 2 tablespoons all-purpose flour, 1 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, 1 tablespoon lemon juice
- For streusel: 1/2 cup rolled oats, 1/3 cup brown sugar, 1/3 cup all-purpose flour, 1/2 teaspoon cinnamon, 1/4 cup cold butter (cubed)
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper.
- To make the crust, mix butter, sugar, flour, and salt until crumbly. Press into the bottom of the pan and bake for 15 minutes.
- In a bowl, toss diced apples with sugars, flour, cinnamon, nutmeg, and lemon juice.
- Spread apple mixture evenly over the pre-baked crust.
- For the streusel, mix oats, brown sugar, flour, and cinnamon. Cut in butter until mixture is crumbly. Sprinkle over the apples.
- Bake for 35–40 minutes or until topping is golden and apples are tender.
- Let cool completely before slicing into bars. Serve as is or with a scoop of vanilla ice cream.
Notes
- Use tart apples like Granny Smith for best flavor balance.
- Bars can be stored in the fridge for up to 5 days.
- Warm individual slices before serving for extra comfort.
