Description

Artichoke Fritters with Whipped Goat Cheese are crispy, golden fritters made from artichokes, herbs, and seasonings, served with a creamy and tangy whipped goat cheese dip. These make a perfect appetizer or snack for any gathering.


Ingredients

  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg, beaten
  • 1/4 cup chopped fresh parsley
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • Olive oil, for frying
  • For the whipped goat cheese: 4 oz goat cheese, softened
  • 2 tablespoons heavy cream
  • 1 tablespoon honey
  • 1 teaspoon lemon juice
  • Fresh herbs for garnish (optional)

Instructions

  1. In a medium bowl, combine the chopped artichoke hearts, breadcrumbs, Parmesan cheese, egg, parsley, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  2. In a separate bowl, whisk together the flour and baking powder. Add this mixture to the artichoke mixture and stir until it forms a dough-like consistency.
  3. Heat olive oil in a large skillet over medium heat. Scoop spoonfuls of the artichoke mixture and form small patties. Carefully place them in the hot oil and cook for 3–4 minutes per side, or until golden brown and crispy.
  4. Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
  5. For the whipped goat cheese, place the goat cheese, heavy cream, honey, and lemon juice in a bowl. Use a hand mixer or a whisk to beat until the mixture is smooth and creamy.
  6. Serve the artichoke fritters warm with the whipped goat cheese on the side. Garnish with fresh herbs, if desired.

Notes

  • For a vegan version, substitute the egg with a flax egg and use dairy-free cream and goat cheese alternatives.
  • If you don’t have fresh artichokes, you can use frozen or jarred artichoke hearts, making sure to drain and chop them well.
  • These fritters are also great served with a dipping sauce, such as tzatziki or marinara.
