- 4 boneless, skinless chicken breasts
- 1 cup queso dip (store-bought or homemade)
- 1 cup shredded cheddar cheese
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- Fresh cilantro, chopped (optional, for garnish)
Instructions
- Preheat the oven to 375°F (190°C). Grease a baking dish with olive oil or cooking spray.
- Season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper on both sides.
- Place the chicken breasts in the prepared baking dish and bake for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and is cooked through.
- While the chicken is baking, heat the queso dip in a saucepan over low heat until smooth. If you’re using homemade queso, heat it until it reaches a pourable consistency.
- Once the chicken is cooked, remove it from the oven and pour the warm queso dip over each chicken breast. Sprinkle the shredded cheddar cheese on top.
- Return the chicken to the oven and bake for an additional 5–7 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped fresh cilantro, if desired, and serve hot with your favorite sides.
Notes
- For extra flavor, add sliced jalapeños or diced tomatoes to the queso sauce before pouring it over the chicken.
- Serve this dish with a side of rice, beans, or a simple salad for a complete meal.
