- 2 salmon fillets (6 oz each)
- 1 bunch of asparagus, trimmed
- 2 tbsp olive oil
- 3 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 1 lemon, thinly sliced
- 1 tbsp lemon juice
- Salt and pepper to taste
- 1/2 tsp crushed red pepper flakes (optional)
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- Cut two large sheets of foil and place one salmon fillet in the center of each.
- Arrange trimmed asparagus alongside the salmon.
- In a small bowl, whisk together melted butter, olive oil, garlic, lemon juice, salt, pepper, and red pepper flakes if using.
- Pour the sauce evenly over the salmon and asparagus.
- Top each fillet with lemon slices.
- Fold the foil over the salmon and seal tightly into packets.
- Place foil packets on a baking sheet and bake for 15–18 minutes, or until salmon is cooked through and flakes easily with a fork.
- Carefully open the packets, garnish with chopped parsley, and serve immediately.

- Use skin-on salmon for extra moisture retention during baking.
- Add cherry tomatoes or zucchini for extra veggies in the packet.
- Don’t overbake; salmon continues to cook slightly after removing from the oven.
