Description

Tender salmon fillets and fresh asparagus are baked together in foil packets, infused with a zesty lemon garlic butter sauce that keeps everything moist and delicious — plus cleanup is a breeze!


Ingredients

  • 2 salmon fillets (6 oz each)
  • 1 bunch of asparagus, trimmed
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 lemon, thinly sliced
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut two large sheets of foil and place one salmon fillet in the center of each.
  3. Arrange trimmed asparagus alongside the salmon.
  4. In a small bowl, whisk together melted butter, olive oil, garlic, lemon juice, salt, pepper, and red pepper flakes if using.
  5. Pour the sauce evenly over the salmon and asparagus.
  6. Top each fillet with lemon slices.
  7. Fold the foil over the salmon and seal tightly into packets.
  8. Place foil packets on a baking sheet and bake for 15–18 minutes, or until salmon is cooked through and flakes easily with a fork.
  9. Carefully open the packets, garnish with chopped parsley, and serve immediately.

Notes

  • Use skin-on salmon for extra moisture retention during baking.
  • Add cherry tomatoes or zucchini for extra veggies in the packet.
  • Don’t overbake; salmon continues to cook slightly after removing from the oven.
