Banana Pancake Donuts are a fun and delicious twist on traditional pancakes, combining the fluffy texture of pancakes with the shape and fun of donuts, topped with a sweet banana glaze.

- 1 ripe banana, mashed
- 1 cup all-purpose flour
- 1/2 cup milk
- 1 egg
- 2 tbsp sugar
- 1 tbsp baking powder
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- 2 tbsp melted butter
- 1/4 tsp cinnamon (optional)
- 1/2 cup powdered sugar (for glaze)
- 1 tbsp milk (for glaze)
- 1/2 tsp vanilla extract (for glaze)
Instructions
- Preheat your donut pan and lightly grease it with cooking spray.
- In a large bowl, combine the mashed banana, flour, milk, egg, sugar, baking powder, vanilla extract, salt, melted butter, and cinnamon (if using). Stir until smooth.
- Carefully spoon the batter into the donut pan, filling each well about 3/4 full.
- Bake at 350°F (175°C) for 10-12 minutes or until a toothpick inserted into the donuts comes out clean.
- While the donuts are baking, mix together the powdered sugar, milk, and vanilla extract in a small bowl to make the glaze.
- Once the donuts are done, allow them to cool slightly before dipping them into the banana glaze.
- Let the glaze set before serving, and enjoy!
Notes
- For an extra touch, top with sliced bananas or a sprinkle of cinnamon sugar.
- These donuts are great for breakfast or as a fun snack!
- You can use maple syrup in the glaze for a more authentic pancake flavor.
