- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup panko breadcrumbs
- 1/4 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha sauce
- 1 tablespoon honey
- 1 cup shredded carrots
- 1 cup sliced cucumbers
- 2 green onions, sliced
- Sesame seeds, for garnish
- Vegetable oil, for frying
Instructions
- Prepare the rice according to package instructions and set aside.
- In three separate bowls, place flour, beaten eggs, and panko breadcrumbs.
- Coat each chicken piece in flour, dip in egg, then coat with panko breadcrumbs.
- Heat vegetable oil in a skillet over medium-high heat and fry chicken pieces until golden brown and cooked through, about 4-5 minutes per side. Drain on paper towels.
- In a small bowl, mix mayonnaise, sweet chili sauce, sriracha, and honey to create the Bang Bang sauce.
- Toss the fried chicken pieces in the Bang Bang sauce until well coated.
- Assemble bowls by placing rice at the base, topping with coated chicken, shredded carrots, cucumbers, and green onions.
- Garnish with sesame seeds and serve immediately.
