- 8 pork sausages (bangers)
- 2 lbs potatoes, peeled and cut into chunks
- 1/2 cup milk
- 4 tbsp unsalted butter
- Salt and black pepper to taste
- 2 large onions, thinly sliced
- 2 tbsp olive oil
- 2 tbsp all-purpose flour
- 2 cups beef stock
- 1 tbsp Worcestershire sauce
- 1 tsp fresh thyme (optional)
Instructions
- Boil the potatoes in salted water for 15-20 minutes until tender. Drain and mash with butter and milk. Season with salt and pepper, then set aside.
- Meanwhile, heat olive oil in a skillet over medium heat. Cook the sausages for 10-12 minutes, turning occasionally, until browned and cooked through. Transfer to a plate and keep warm.
- In the same skillet, add sliced onions and cook over medium-low heat for 8-10 minutes until softened and golden.
- Sprinkle the flour over the onions and stir for 1-2 minutes. Gradually whisk in the beef stock, Worcestershire sauce, and thyme (if using). Simmer for 5 minutes until the gravy thickens.
- Return the sausages to the skillet and warm through in the gravy.
- Serve the sausages over mashed potatoes, generously spooning the onion gravy on top.
Notes
- You can use chicken or vegetarian sausages as a substitute for pork sausages.
- For creamier mash, add a splash of cream instead of milk.
- This dish pairs perfectly with peas or roasted vegetables.
