- 3 tablespoons olive oil
- 4 cloves garlic, minced

- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)
- Salt and freshly ground black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Wash and dry potatoes. Using a sharp knife, carefully score each potato by making shallow cuts all around the potato without cutting all the way through.
- Place potatoes on the baking sheet and drizzle with olive oil. Toss to coat evenly.
- Sprinkle minced garlic, rosemary, thyme, salt, and pepper over the potatoes. Toss gently to distribute.
- Arrange potatoes cut-side up on the baking sheet.
- Bake for 35–45 minutes, or until potatoes are tender inside and crispy on the edges. You can check doneness by inserting a fork.
- Remove from oven and garnish with fresh parsley before serving.
