Biscuits Gravy Hashbrown Casserole is a hearty, comforting Southern-style breakfast casserole loaded with layers of crispy hashbrowns, savory sausage gravy, fluffy biscuits, and melted cheese. Perfect for brunch, holidays, or feeding a hungry crowd.

- 1 (16 oz) package refrigerated biscuit dough (8 biscuits)
- 1 (26–28 oz) bag frozen shredded hashbrowns, thawed
- 1 pound breakfast sausage
- 1/4 cup all-purpose flour
- 2 1/2 cups whole milk
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 1/2 cups shredded cheddar cheese
- Butter or non-stick spray for greasing
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a large skillet, cook the sausage over medium heat until browned and fully cooked. Do not drain all the grease.
- Sprinkle flour over the sausage and stir for 1–2 minutes until flour is absorbed.
- Gradually whisk in the milk, cooking until the gravy thickens (about 5–7 minutes). Season with salt, pepper, garlic powder, and onion powder. Remove from heat.
- Spread the thawed hashbrowns evenly in the greased baking dish. Sprinkle half of the shredded cheese over the top.
- Pour the sausage gravy evenly over the hashbrowns and cheese layer.
- Cut the biscuits into quarters and arrange them over the top of the casserole.
- Sprinkle the remaining cheese over the biscuits.
- Bake uncovered for 35–40 minutes, or until biscuits are golden and cooked through and the casserole is bubbly.
- Let cool for 5–10 minutes before serving. Garnish with chopped parsley if desired.

- Add scrambled eggs or sautéed veggies to customize the layers.
- Make it spicy with hot sausage or crushed red pepper.
