- 4 boneless, skinless chicken breasts
- 4 oz cream cheese, softened
- 1/4 cup blackberry preserves
- 1 jalapeño, finely diced (seeds removed for less heat)
- 1/2 cup shredded mozzarella or Monterey Jack cheese
- Salt and pepper, to taste
- 1 tablespoon olive oil
- Fresh thyme or parsley, for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- In a bowl, mix cream cheese, blackberry preserves, diced jalapeño, and shredded cheese until well combined.
- Using a sharp knife, cut a pocket into each chicken breast without slicing all the way through.
- Stuff each chicken breast with the blackberry-jalapeño mixture and secure with toothpicks if needed.
- Season both sides of the chicken with salt and pepper.
- In a skillet, heat olive oil over medium-high heat. Sear chicken for 2–3 minutes per side until lightly browned.
- Transfer seared chicken to the baking dish and bake for 20–25 minutes, or until internal temperature reaches 165°F (74°C).
- Remove toothpicks, garnish if desired, and serve warm.
