This Blueberry Coffee Cake is soft, moist, and bursting with juicy blueberries in every bite. Topped with a buttery cinnamon streusel and perfect for breakfast, brunch, or an anytime treat, it’s a comforting classic that pairs beautifully with your favorite cup of coffee.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1 1/2 cups fresh or frozen blueberries
  • For the Streusel Topping:
  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup cold unsalted butter, cubed

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9-inch baking pan or line with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  4. Add sour cream and milk, mixing until smooth. Gradually mix in the dry ingredients until just combined.
  5. Gently fold in the blueberries. Spread the batter evenly into the prepared pan.
  6. To make the streusel, combine flour, brown sugar, and cinnamon. Cut in cold butter until crumbly. Sprinkle evenly over the batter.
  7. Bake for 40–45 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool for 10–15 minutes before serving. Enjoy warm or at room temperature.

Notes

  • If using frozen blueberries, toss them in a tablespoon of flour to prevent sinking.
  • Store leftovers covered at room temperature for up to 2 days or refrigerated for up to 5 days.
  • Serve with a dusting of powdered sugar for a prettier presentation.
