Description

A rich and hearty breakfast casserole featuring layers of crispy bread, savory caramelized onions, earthy mushrooms, and melty cheddar — perfect for entertaining or a make-ahead meal!


Ingredients

  • 6 cups diced day-old bread
  • 1 tablespoon butter
  • 1 large onion, thinly sliced
  • 2 cups diced mushrooms
  • 6 large eggs
  • 2 cups milk
  • 1 teaspoon herbs de Provence
  • 1 1/2 cups shredded cheddar cheese
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 casserole dish.
  2. In a large skillet over medium heat, melt butter and add sliced onions. Cook, stirring frequently, until caramelized, about 10 minutes.
  3. Add diced mushrooms and cook 5 minutes more, until softened.
  4. Spread bread cubes evenly in casserole dish. Top with onion and mushroom mixture and shredded cheddar.
  5. Whisk together eggs, milk, herbs de Provence, and a pinch of salt and pepper. Pour evenly over casserole.
  6. Let sit for 15 minutes to allow bread to absorb mixture.
  7. Bake for 35-40 minutes, until center is set and top is golden.

Notes

  • Add diced peppers or diced ham for additional flavor.
  • Assemble the casserole the night before and refrigerate overnight.
  • Serve with a side salad or fresh fruit.
