- 6 cups diced day-old bread
- 1 tablespoon butter
- 1 large onion, thinly sliced
- 2 cups diced mushrooms
- 6 large eggs
- 2 cups milk
- 1 teaspoon herbs de Provence
- 1 1/2 cups shredded cheddar cheese
- Salt and black pepper to taste
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13 casserole dish.
- In a large skillet over medium heat, melt butter and add sliced onions. Cook, stirring frequently, until caramelized, about 10 minutes.
- Add diced mushrooms and cook 5 minutes more, until softened.
- Spread bread cubes evenly in casserole dish. Top with onion and mushroom mixture and shredded cheddar.
- Whisk together eggs, milk, herbs de Provence, and a pinch of salt and pepper. Pour evenly over casserole.
- Let sit for 15 minutes to allow bread to absorb mixture.
- Bake for 35-40 minutes, until center is set and top is golden.
Notes
- Add diced peppers or diced ham for additional flavor.
- Assemble the casserole the night before and refrigerate overnight.
- Serve with a side salad or fresh fruit.
