- 4 boneless, skinless chicken breasts
- 1 cup steamed broccoli florets, chopped
- 1 cup shredded cheddar cheese
- 1/4 cup cream cheese, softened
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- Salt and pepper to taste
- 1/2 teaspoon paprika
- 1/2 teaspoon dried Italian herbs
Instructions
- Preheat oven to 375°F (190°C).
- Using a sharp knife, carefully cut a pocket into the side of each chicken breast, being careful not to cut all the way through.
- In a bowl, mix chopped broccoli, shredded cheddar, cream cheese, and minced garlic until well combined.
- Stuff each chicken breast pocket with the broccoli and cheese mixture.
- Brush the outside of the chicken breasts with olive oil and season with salt, pepper, paprika, and Italian herbs.
- Place the stuffed chicken breasts in a baking dish and bake for 25–30 minutes, or until the chicken is cooked through and juices run clear.
- Let rest for 5 minutes before serving.
Notes
- Use fresh or frozen broccoli, but make sure to steam and chop it finely.
- Substitute cheddar with mozzarella or your favorite melting cheese.
- Serve with a side of rice or salad for a complete meal.
