For the Caramel Glaze:

Instructions

  1. Preheat oven to 325°F (160°C). Grease and flour a bundt pan.
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Add dry ingredients to the creamed mixture alternately with milk, beginning and ending with the flour mixture. Stir in vanilla and pecans if using.
  6. Pour batter into the prepared bundt pan and smooth the top.
  7. Bake for 75–85 minutes, or until a toothpick inserted in the center comes out clean. Cool in pan for 15 minutes before inverting onto a wire rack.
  8. To make the glaze: In a saucepan over medium heat, melt the butter. Stir in brown sugar and milk, bringing to a gentle boil. Cook for 2–3 minutes, then remove from heat and stir in vanilla.
  9. Pour the warm caramel glaze over the cooled cake. Let set before slicing.
