Description

A delicious and easy-to-make baked chicken dish topped with a fresh, flavorful bruschetta topping. The combination of juicy chicken breasts and a tomato, basil, and garlic mixture makes for a satisfying and healthy meal.

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cherry tomatoes, diced
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 1 tbsp balsamic vinegar
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a baking dish with olive oil or cooking spray.
  2. Season the chicken breasts with garlic powder, onion powder, salt, and pepper on both sides. Place them in the prepared baking dish.
  3. Drizzle olive oil over the chicken breasts and bake for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and is cooked through.
  4. While the chicken is baking, prepare the bruschetta topping. In a bowl, combine the diced tomatoes, chopped basil, minced garlic, and balsamic vinegar. Mix until well combined.
  5. Once the chicken is done baking, remove it from the oven. Spoon the bruschetta mixture evenly over each chicken breast, then sprinkle the shredded mozzarella and grated Parmesan cheese on top.
  6. Return the chicken to the oven and bake for an additional 5–7 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and let rest for a few minutes before serving. Garnish with additional fresh basil if desired.

Notes

  • For a richer flavor, add a drizzle of olive oil over the bruschetta mixture before serving.
  • If you prefer a more tangy flavor, you can use a little extra balsamic vinegar in the topping.
  • Serve this dish with a side of rice, pasta, or a simple salad for a complete meal.
