- 2 cups whole raw almonds
- 1 cup granulated sugar
- 1/2 cup water
- 1 tablespoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large skillet or saucepan, combine sugar, water, cinnamon, and salt over medium heat. Stir until the sugar dissolves.
- Add almonds and cook, stirring often, until the liquid reduces and begins to crystallize, about 8–10 minutes.
- Continue stirring until the sugar coats the almonds and becomes dry and sandy in texture.
- Spread the almonds in a single layer on the prepared baking sheet.
- Bake for 10–12 minutes, stirring halfway through, until the almonds are crisp and golden. Watch carefully to avoid burning.
- Remove from the oven and let cool completely before storing or serving.
