- For caramelized bananas:
- 2 ripe bananas, sliced
- 2 tbsp brown sugar
- 1 tbsp butter
- For topping:
- 1/4 cup shredded coconut, toasted
- Maple syrup, for serving
Instructions
- Preheat a waffle iron and lightly grease it.
- In a shallow bowl, whisk together eggs, milk, cinnamon, vanilla, and optional brown sugar.
- Dip each banana bread slice into the egg mixture, coating both sides.
- Place the soaked banana bread slice into the waffle iron and cook until golden and crisp (about 3–5 minutes). Repeat with remaining slices.
- To make the caramelized bananas, melt butter in a pan over medium heat, add banana slices and brown sugar. Cook until soft and caramelized, about 3–4 minutes per side.
- Toast the shredded coconut in a dry pan over low heat until golden brown, stirring frequently.
- Top each waffle French toast slice with caramelized bananas, toasted coconut, and a drizzle of maple syrup. Serve immediately.
