Description

  • 2 eggs

  • 1 tbsp brown sugar (optional)
  • 2 tbsp butter (for cooking)
  • For caramelized bananas:
  • 2 ripe bananas, sliced
  • 2 tbsp brown sugar
  • 1 tbsp butter
  • For topping:
  • 1/4 cup shredded coconut, toasted
  • Maple syrup, for serving

Instructions

  1. Preheat a waffle iron and lightly grease it.
  2. In a shallow bowl, whisk together eggs, milk, cinnamon, vanilla, and optional brown sugar.
  3. Dip each banana bread slice into the egg mixture, coating both sides.
  4. Place the soaked banana bread slice into the waffle iron and cook until golden and crisp (about 3–5 minutes). Repeat with remaining slices.
  5. To make the caramelized bananas, melt butter in a pan over medium heat, add banana slices and brown sugar. Cook until soft and caramelized, about 3–4 minutes per side.
  6. Toast the shredded coconut in a dry pan over low heat until golden brown, stirring frequently.
  7. Top each waffle French toast slice with caramelized bananas, toasted coconut, and a drizzle of maple syrup. Serve immediately.
