Description

This Char-Grilled Chicken Bowl is a satisfying trio of smoky grilled chicken, creamy garlic-infused pasta, and golden crispy herb-roasted potatoes. A comforting, balanced dish that’s full of flavor and perfect for dinner or hearty meal prep.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 8 oz pasta (penne or fettuccine)
  • 2 tbsp butter
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp ground black pepper
  • 1/2 tsp salt
  • 2 cups baby potatoes, halved
  • 1 tbsp olive oil (for potatoes)
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 425°F (220°C). Toss halved potatoes with olive oil, oregano, thyme, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until golden and crispy.
  2. Marinate chicken breasts in olive oil, smoked paprika, garlic powder, salt, and pepper for at least 15 minutes.
  3. Grill the chicken over medium-high heat for 6–8 minutes per side or until fully cooked and charred. Let rest before slicing.
  4. Cook pasta according to package directions. Drain and set aside.
  5. In a skillet, melt butter over medium heat. Sauté garlic for 1 minute until fragrant. Add cream, Parmesan, salt, and pepper. Simmer for 3–4 minutes until slightly thickened.
  6. Add the cooked pasta to the sauce and toss to coat well.
  7. Assemble bowls with a portion of garlic cream pasta, grilled chicken slices, and crispy herb potatoes. Garnish with fresh parsley and serve hot.

Notes

  • Use a grill pan if outdoor grilling isn’t available.
  • You can substitute cream with a lighter alternative like evaporated milk for a lower-calorie version.
  • Roasted broccoli or green beans make a great veggie add-on.
