- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- Salt and pepper to taste
- 8 oz pasta (penne or fettuccine)
- 2 tbsp butter
- 3 garlic cloves, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 tsp ground black pepper
- 1/2 tsp salt
- 2 cups baby potatoes, halved
- 1 tbsp olive oil (for potatoes)
- 1 tsp dried oregano
- 1 tsp dried thyme
- Fresh parsley for garnish
Instructions
- Preheat oven to 425°F (220°C). Toss halved potatoes with olive oil, oregano, thyme, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until golden and crispy.
- Marinate chicken breasts in olive oil, smoked paprika, garlic powder, salt, and pepper for at least 15 minutes.
- Grill the chicken over medium-high heat for 6–8 minutes per side or until fully cooked and charred. Let rest before slicing.
- Cook pasta according to package directions. Drain and set aside.
- In a skillet, melt butter over medium heat. Sauté garlic for 1 minute until fragrant. Add cream, Parmesan, salt, and pepper. Simmer for 3–4 minutes until slightly thickened.
- Add the cooked pasta to the sauce and toss to coat well.
- Assemble bowls with a portion of garlic cream pasta, grilled chicken slices, and crispy herb potatoes. Garnish with fresh parsley and serve hot.

- Use a grill pan if outdoor grilling isn’t available.
- You can substitute cream with a lighter alternative like evaporated milk for a lower-calorie version.
