- 1/2 pound ground beef
- 1/2 small onion, finely diced
- 1 clove garlic, minced
- 1 tablespoon ketchup
- 1 teaspoon yellow mustard
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can (10 oz) diced tomatoes with green chilies, drained
- 8 oz processed cheese (like Velveeta), cubed
- 1/2 cup shredded cheddar cheese
- 1/4 cup milk (more as needed to thin)
- Optional toppings: chopped pickles, green onions, sesame seeds
Instructions
- In a skillet over medium heat, cook ground beef and diced onion until beef is browned and onion is soft, about 5–7 minutes. Drain excess fat if needed.
- Add garlic, ketchup, mustard, salt, and pepper. Stir and cook for 1 more minute.
- Reduce heat to low and stir in the diced tomatoes with chilies.
- Add processed cheese, shredded cheddar, and milk. Stir continuously until the cheese is fully melted and the dip is smooth and creamy.
- If needed, add more milk to reach your desired consistency.
- Serve warm, topped with optional pickles or green onions, and enjoy with tortilla chips, pretzels, or fries.
Notes
- Use lean ground beef to reduce grease in the dip.
- Substitute with ground turkey or plant-based meat for a lighter or vegetarian version.
- Keep warm in a slow cooker set to ‘warm’ for party serving.
