Description

Ingredients

  • 1 lb cheese tortellini (fresh or refrigerated)
  • 1 tbsp olive oil
  • 1 lb shaved steak or thinly sliced beef (such as ribeye)
  • 1 small onion, thinly sliced
  • 1 small red bell pepper, thinly sliced
  • 1 small green bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 tbsp butter
  • 1 cup heavy cream
  • 1/2 cup beef broth
  • 1 cup shredded provolone cheese (or sliced and chopped)
  • Salt and black pepper to taste
  • Red pepper flakes (optional, for heat)

Instructions

  1. Cook tortellini according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add the shaved steak and cook until browned. Remove and set aside.
  3. In the same skillet, add butter, then sauté onions and bell peppers until soft, about 5 minutes. Add garlic and cook another 30 seconds.
  4. Deglaze the pan with beef broth, scraping up any browned bits, then stir in the heavy cream and bring to a simmer.
  5. Add provolone cheese and stir until melted and sauce is smooth. Season with salt, pepper, and red pepper flakes if using.
  6. Return the cooked steak and tortellini to the skillet. Toss everything to coat in the creamy sauce and heat through.
  7. Serve hot, garnished with extra cheese or fresh parsley if desired.

Notes

  • For extra cheesiness, sprinkle with more provolone or mozzarella before serving.
  • Use pre-cooked tortellini to save time.
