- 1 lb cheese tortellini (fresh or refrigerated)
- 1 tbsp olive oil
- 1 lb shaved steak or thinly sliced beef (such as ribeye)
- 1 small onion, thinly sliced
- 1 small red bell pepper, thinly sliced
- 1 small green bell pepper, thinly sliced
- 2 cloves garlic, minced
- 1 tbsp butter
- 1 cup heavy cream
- 1/2 cup beef broth
- 1 cup shredded provolone cheese (or sliced and chopped)
- Salt and black pepper to taste
- Red pepper flakes (optional, for heat)
Instructions
- Cook tortellini according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Add the shaved steak and cook until browned. Remove and set aside.
- In the same skillet, add butter, then sauté onions and bell peppers until soft, about 5 minutes. Add garlic and cook another 30 seconds.
- Deglaze the pan with beef broth, scraping up any browned bits, then stir in the heavy cream and bring to a simmer.
- Add provolone cheese and stir until melted and sauce is smooth. Season with salt, pepper, and red pepper flakes if using.
- Return the cooked steak and tortellini to the skillet. Toss everything to coat in the creamy sauce and heat through.
- Serve hot, garnished with extra cheese or fresh parsley if desired.
Notes
- For extra cheesiness, sprinkle with more provolone or mozzarella before serving.
- Use pre-cooked tortellini to save time.
- Leftovers can be refrigerated for up to 3 days and reheated gently with a splash of broth or cream.
