Description

  • 2 cups diced potatoes (peeled and chopped small)
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup nacho cheese sauce (plus extra for drizzling)
  • 6 large flour tortillas
  • 1/4 cup chopped green onions (optional)
  • 1/4 cup sour cream (optional, for serving)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced potatoes and cook until golden and tender, about 10–12 minutes. Remove and set aside.
  2. In the same skillet, cook ground beef until browned. Drain excess fat.
  3. Add chili powder, cumin, garlic powder, salt, and pepper. Stir to combine.
  4. Return cooked potatoes to the skillet with the beef. Mix in shredded cheddar and nacho cheese sauce until everything is well coated and melted.
  5. Warm tortillas slightly to make them pliable. Spoon the beef and potato mixture onto the center of each tortilla and roll tightly into burritos.
  6. Optional: Heat a clean skillet or grill pan over medium heat and toast the burritos seam-side down until golden brown, about 2–3 minutes per side.
  7. Serve topped with extra nacho cheese sauce, green onions, and sour cream if desired.
