- 1 cup shredded cheddar cheese
- 1/2 cup nacho cheese sauce (plus extra for drizzling)
- 6 large flour tortillas
- 1/4 cup chopped green onions (optional)
- 1/4 cup sour cream (optional, for serving)
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced potatoes and cook until golden and tender, about 10–12 minutes. Remove and set aside.
- In the same skillet, cook ground beef until browned. Drain excess fat.
- Add chili powder, cumin, garlic powder, salt, and pepper. Stir to combine.
- Return cooked potatoes to the skillet with the beef. Mix in shredded cheddar and nacho cheese sauce until everything is well coated and melted.
- Warm tortillas slightly to make them pliable. Spoon the beef and potato mixture onto the center of each tortilla and roll tightly into burritos.
- Optional: Heat a clean skillet or grill pan over medium heat and toast the burritos seam-side down until golden brown, about 2–3 minutes per side.
- Serve topped with extra nacho cheese sauce, green onions, and sour cream if desired.
