Description
A bold and creamy one-skillet dish featuring tender chicken, Cajun spices, garlic, rotini pasta, and plenty of melted cheese — perfect for a quick and comforting dinner.

- 2 tbsp olive oil
- 1 lb boneless, skinless chicken breasts, diced
- 1 tbsp Cajun seasoning
- 1/2 tsp salt (optional, depending on seasoning blend)
- 1/2 tsp black pepper
- 4 cloves garlic, minced
- 2 cups rotini pasta
- 2 1/2 cups chicken broth
- 1/2 cup heavy cream
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 2 tbsp chopped parsley (optional, for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add diced chicken, Cajun seasoning, salt (if using), and pepper. Cook for 5–6 minutes until chicken is browned and cooked through. Remove and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
- Add rotini pasta and chicken broth. Stir and bring to a boil. Reduce heat to a simmer and cook uncovered for 10–12 minutes, stirring occasionally, until pasta is tender and most of the liquid is absorbed.
- Stir in heavy cream, cheddar cheese, and Parmesan. Mix until cheese is melted and sauce is creamy.
- Return the cooked chicken to the skillet and stir to combine. Cook for another 1–2 minutes to heat through.
- Garnish with chopped parsley and serve warm.
Notes
- Adjust Cajun seasoning to your spice preference — use more or less depending on desired heat.
- You can substitute rotini with penne or fusilli if preferred.
- Add bell peppers or spinach for extra veggies and color.
