Description

A bold and creamy one-skillet dish featuring tender chicken, Cajun spices, garlic, rotini pasta, and plenty of melted cheese — perfect for a quick and comforting dinner.


Ingredients

  • 2 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts, diced
  • 1 tbsp Cajun seasoning
  • 1/2 tsp salt (optional, depending on seasoning blend)
  • 1/2 tsp black pepper
  • 4 cloves garlic, minced
  • 2 cups rotini pasta
  • 2 1/2 cups chicken broth
  • 1/2 cup heavy cream
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp chopped parsley (optional, for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add diced chicken, Cajun seasoning, salt (if using), and pepper. Cook for 5–6 minutes until chicken is browned and cooked through. Remove and set aside.
  2. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  3. Add rotini pasta and chicken broth. Stir and bring to a boil. Reduce heat to a simmer and cook uncovered for 10–12 minutes, stirring occasionally, until pasta is tender and most of the liquid is absorbed.
  4. Stir in heavy cream, cheddar cheese, and Parmesan. Mix until cheese is melted and sauce is creamy.
  5. Return the cooked chicken to the skillet and stir to combine. Cook for another 1–2 minutes to heat through.
  6. Garnish with chopped parsley and serve warm.

Notes

  • Adjust Cajun seasoning to your spice preference — use more or less depending on desired heat.
  • You can substitute rotini with penne or fusilli if preferred.
  • Add bell peppers or spinach for extra veggies and color.
