Description

Cheesy Layered Enchilada Bake is a hearty, comforting casserole that layers seasoned ground beef, enchilada sauce, tortillas, and plenty of melted cheese for a delicious Tex-Mex inspired family dinner.


Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 (10 oz) can red enchilada sauce
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 2 cups shredded Mexican blend cheese
  • 6 small flour or corn tortillas
  • Optional toppings: chopped green onions, cilantro, sour cream

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook ground beef and chopped onion until beef is browned and onion is soft. Drain excess fat.
  3. Stir in enchilada sauce, black beans, corn, chili powder, cumin, salt, and pepper. Simmer for 5 minutes.
  4. In a greased 9×13-inch baking dish, place two tortillas on the bottom.
  5. Spoon a third of the beef mixture over the tortillas and sprinkle with 1/3 of the cheese.
  6. Repeat layers twice more, ending with cheese on top.
  7. Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes or until cheese is melted and bubbly.
  8. Let rest for 5–10 minutes before slicing. Top with green onions, cilantro, or sour cream if desired.

Notes

  • Use ground turkey or shredded chicken as a lighter alternative.
  • Add jalapeños or hot sauce for extra spice.
  • Leftovers make great next-day lunches and reheat well in the microwave.
