Description
Cheesy Layered Enchilada Bake is a hearty, comforting casserole that layers seasoned ground beef, enchilada sauce, tortillas, and plenty of melted cheese for a delicious Tex-Mex inspired family dinner.

- 1 lb ground beef
- 1 small onion, chopped
- 1 (10 oz) can red enchilada sauce
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup corn kernels (fresh, canned, or frozen)
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper to taste
- 2 cups shredded Mexican blend cheese
- 6 small flour or corn tortillas
- Optional toppings: chopped green onions, cilantro, sour cream
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet over medium heat, cook ground beef and chopped onion until beef is browned and onion is soft. Drain excess fat.
- Stir in enchilada sauce, black beans, corn, chili powder, cumin, salt, and pepper. Simmer for 5 minutes.
- In a greased 9×13-inch baking dish, place two tortillas on the bottom.
- Spoon a third of the beef mixture over the tortillas and sprinkle with 1/3 of the cheese.
- Repeat layers twice more, ending with cheese on top.
- Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes or until cheese is melted and bubbly.
- Let rest for 5–10 minutes before slicing. Top with green onions, cilantro, or sour cream if desired.
Notes
- Use ground turkey or shredded chicken as a lighter alternative.
- Add jalapeños or hot sauce for extra spice.
- Leftovers make great next-day lunches and reheat well in the microwave.
