- 4 large russet potatoes, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 small onion, diced
- 2 teaspoons chili powder
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 1/2 cups shredded cheddar cheese
- 2 tablespoons vegetable oil
Instructions
- Heat oil in a large skillet over medium heat.
- Add diced potatoes and cook for 10 minutes, stirring frequently.
- Add diced peppers, onion, chili powder, paprika, garlic powder, salt, and black pepper. Cook for another 10 minutes until veggies are tender and crispy.
- Remove from heat and sprinkle cheddar cheese over the mixture. Cover for 2 minutes to allow cheese to melt.
- Serve immediately.
