Description

Cheesy Mexican Home Fries are crispy diced potatoes tossed in Mexican spices, peppers, and melty cheddar — perfect as a savory side for breakfast, brunch, or dinner!


Ingredients

  • 4 large russet potatoes, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small onion, diced
  • 2 teaspoons chili powder
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 cups shredded cheddar cheese
  • 2 tablespoons vegetable oil

Instructions

  1. Heat oil in a large skillet over medium heat.
  2. Add diced potatoes and cook for 10 minutes, stirring frequently.
  3. Add diced peppers, onion, chili powder, paprika, garlic powder, salt, and black pepper. Cook for another 10 minutes until veggies are tender and crispy.
  4. Remove from heat and sprinkle cheddar cheese over the mixture. Cover for 2 minutes to allow cheese to melt.
  5. Serve immediately.
