Cheesy Taco Potatoes are a deliciously satisfying dish combining tender baked potatoes loaded with seasoned taco meat, melted cheese, and fresh toppings — perfect for a quick dinner or hearty snack.

- 4 large baking potatoes
- 1 lb ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 1 cup shredded cheddar cheese
- 1/2 cup diced tomatoes
- 1/4 cup sliced black olives
- 1/4 cup chopped green onions
- 1/2 cup sour cream
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Pierce potatoes with a fork several times and bake directly on oven rack for 45–60 minutes until tender.
- While potatoes bake, cook ground beef in a skillet over medium heat until browned. Drain excess fat.
- Add taco seasoning and water to the beef, simmer for 5 minutes until thickened.
- Remove potatoes from oven and cut in half lengthwise. Scoop out some of the potato flesh to create a cavity.
- Fill potato halves with seasoned beef, then top with shredded cheese.
- Return to oven and bake for an additional 10 minutes or until cheese is melted and bubbly.
- Remove from oven and garnish with diced tomatoes, olives, green onions, and a dollop of sour cream.
- Serve immediately and enjoy!
Notes
- Use russet potatoes for best texture.
- Customize toppings to your preference, such as adding jalapeños or avocado.
- Leftover taco meat works great for this recipe.
