- 4 boneless, skinless chicken breasts, pounded thin
- Salt and pepper, to taste
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup Italian-style breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 4 slices prosciutto
- 8 oz (225g) spaghetti or angel hair pasta
- 1/2 cup prepared basil pesto
- 1 tablespoon butter
- 1 tablespoon all-purpose flour (for sauce)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese (for sauce)
- Fresh basil or parsley, for garnish
Instructions
- Cook the pasta according to package instructions. Drain and toss with pesto. Set aside.
- Season chicken breasts with salt and pepper. Dredge in flour, dip in beaten eggs, then coat in a mixture of breadcrumbs and Parmesan.
- Heat olive oil in a skillet over medium heat. Fry chicken breasts for 4–5 minutes per side until golden brown and cooked through. Remove and keep warm.
- In a small saucepan, melt butter. Whisk in 1 tbsp flour and cook for 1 minute. Slowly add heavy cream, stirring until thickened.
- Stir in 1/2 cup Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
- Place a serving of pesto pasta on each plate. Top with a chicken cutlet, a slice of prosciutto, and drizzle with Parmesan cream sauce.
- Garnish with fresh herbs and serve immediately.

- Use freshly grated Parmesan for best flavor and texture in the sauce.
- For extra crispiness, pan-fry chicken in a mix of oil and butter.
- Prosciutto can be crisped in the oven for added texture.
- Substitute angel hair with fettuccine for a heartier version.
