Description

Chicken Bellagio is a restaurant-style dish featuring crispy breaded chicken cutlets served over a bed of pesto pasta, topped with prosciutto and a creamy Parmesan sauce. It’s elegant, rich, and bursting with flavor.


Ingredients

  • 4 boneless, skinless chicken breasts, pounded thin
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup Italian-style breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 4 slices prosciutto
  • 8 oz (225g) spaghetti or angel hair pasta
  • 1/2 cup prepared basil pesto
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour (for sauce)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese (for sauce)
  • Fresh basil or parsley, for garnish

Instructions

  1. Cook the pasta according to package instructions. Drain and toss with pesto. Set aside.
  2. Season chicken breasts with salt and pepper. Dredge in flour, dip in beaten eggs, then coat in a mixture of breadcrumbs and Parmesan.
  3. Heat olive oil in a skillet over medium heat. Fry chicken breasts for 4–5 minutes per side until golden brown and cooked through. Remove and keep warm.
  4. In a small saucepan, melt butter. Whisk in 1 tbsp flour and cook for 1 minute. Slowly add heavy cream, stirring until thickened.
  5. Stir in 1/2 cup Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
  6. Place a serving of pesto pasta on each plate. Top with a chicken cutlet, a slice of prosciutto, and drizzle with Parmesan cream sauce.
  7. Garnish with fresh herbs and serve immediately.

  • Use freshly grated Parmesan for best flavor and texture in the sauce.
  • For extra crispiness, pan-fry chicken in a mix of oil and butter.
  • Prosciutto can be crisped in the oven for added texture.
  • Substitute angel hair with fettuccine for a heartier version.
