Description

Chicken Koobideh is a Persian-style ground chicken kebab, seasoned with aromatic spices, grated onion, and saffron, then grilled to juicy perfection. It’s traditionally served with saffron rice or flatbread and grilled tomatoes.


Ingredients

  • 1 lb ground chicken (preferably a mix of thigh and breast)
  • 1 medium onion, grated and excess moisture squeezed out
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon saffron threads, dissolved in 1 tablespoon hot water
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice

Instructions

  1. In a large bowl, combine the ground chicken with grated onion, salt, pepper, turmeric, paprika, cumin, saffron water, olive oil, and lemon juice.
  2. Mix thoroughly with your hands until the mixture is sticky and well combined. Chill for 30 minutes to firm up.
  3. Preheat grill or broiler to medium-high heat. If using skewers, shape the chicken mixture around flat metal skewers or mold into sausage-like shapes for grilling.
  4. Grill for 4–5 minutes on each side, turning carefully until golden and cooked through.
  5. Serve with saffron rice, grilled tomatoes, and flatbread.

Notes

  • Using flat skewers helps keep the koobideh from falling apart during grilling.
  • Refrigerating the mixture helps bind the kebabs better.
  • Add chopped parsley or garlic for extra flavor variations.
