Description

Chicken Murphy is a flavorful, hearty dish featuring chicken cooked with bell peppers, onions, garlic, and a rich, savory sauce. Perfectly seasoned with Italian herbs, it’s a one-pan meal that combines tender chicken with bold flavors.


Ingredients

  • 4 boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup white wine (optional)
  • 1/4 cup chopped green olives
  • 1 tablespoon capers
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken thighs with salt, pepper, oregano, and thyme on both sides.
  2. Heat olive oil in a large skillet over medium heat. Add chicken thighs and cook for 5–6 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, add the onions and bell peppers. Cook for 4–5 minutes until softened.
  4. Add garlic, chicken broth, white wine, olives, and capers. Stir to combine, scraping up any brown bits from the bottom of the skillet.
  5. Return the chicken thighs to the skillet, spooning some of the sauce over the top. Cover and simmer for 10–15 minutes, until chicken is cooked through and the sauce has thickened.
  6. Garnish with fresh parsley and serve hot with rice or crusty bread.

Notes

  • For extra spice, add some red pepper flakes or sliced jalapeños to the sauce.
  • This dish can be served with pasta, mashed potatoes, or a side salad.
  • If you prefer, you can use boneless, skinless chicken breasts instead of thighs.
