- 2 tablespoons butter
- 2 cups cooked, shredded chicken
- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream
- 1/2 cup milk
- 1 cup shredded cheddar cheese (plus more for topping, optional)
- Salt and pepper to taste
- Optional: 1/2 teaspoon garlic powder or onion powder
- Optional topping: crushed crackers or French fried onions
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Prepare the Rice-a-Roni according to package directions using butter and water, but cook only until tender (do not overcook).
- In a large bowl, mix together cooked rice, shredded chicken, cream of chicken soup, sour cream, milk, cheddar cheese, and seasonings.
- Pour the mixture into the prepared baking dish and spread evenly.
- Top with additional shredded cheese or crushed crackers/fried onions if desired.
- Bake uncovered for 25–30 minutes, or until hot and bubbly.
- Let rest for 5 minutes before serving.
Notes
- Use rotisserie chicken for quicker prep.
- You can substitute cream of mushroom or celery soup if preferred.
- Great for using up leftover cooked chicken or turkey.
