Chicken Scarpariello is a zesty and comforting Italian-American dish made with sautéed chicken, sausage, peppers, and a tangy vinegar-wine sauce — perfect for weeknight dinners or special occasions.

- 4 bone-in, skin-on chicken thighs
- 1/2 pound sweet Italian sausage, cut into 1-inch pieces
- Salt and black pepper, to taste
- 2 tablespoons olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 4 garlic cloves, minced
- 1/2 cup dry white wine
- 1/2 cup chicken broth
- 1/4 cup white wine vinegar
- 1 teaspoon dried oregano
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1/4 cup chopped fresh parsley (for garnish)
Instructions
- Season chicken thighs with salt and pepper.
- Heat olive oil in a large skillet or Dutch oven over medium-high heat. Sear chicken thighs skin-side down until golden brown, about 5–6 minutes per side. Remove and set aside.
- Add sausage to the pan and cook until browned. Remove and set aside with the chicken.
- In the same pan, sauté bell peppers until softened, about 5 minutes. Add garlic and cook for another minute.
- Deglaze the pan with white wine, scraping up browned bits. Let it simmer for 2 minutes.
- Stir in chicken broth, vinegar, oregano, and red pepper flakes.
- Return chicken and sausage to the pan. Cover and simmer on low for 25–30 minutes, until chicken is cooked through and tender.
- Uncover and simmer for 5 more minutes to reduce the sauce slightly.
- Garnish with fresh parsley and serve hot with crusty bread, potatoes, or over pasta.
Notes
- Use boneless chicken if preferred, but reduce cooking time accordingly.
- For a less tangy version, reduce the amount of vinegar slightly.
- Pairs well with roasted potatoes or polenta for a complete meal.
