Description

Chicken Sorrentino is a flavorful Italian-American dish featuring breaded chicken cutlets layered with prosciutto, eggplant, and melted mozzarella cheese, all topped with a rich marinara sauce. It’s a comforting, restaurant-style meal perfect for a special dinner.

  • 4 boneless, skinless chicken breasts, pounded thin
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup Italian breadcrumbs
  • Vegetable oil, for frying
  • 1 medium eggplant, sliced into 1/4-inch rounds
  • Olive oil, for brushing
  • 4 slices prosciutto
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella or sliced fresh mozzarella
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley, for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Season chicken with salt and pepper. Dredge in flour, dip in beaten eggs, then coat in breadcrumbs.
  3. Heat vegetable oil in a skillet over medium heat. Fry chicken until golden brown on both sides (about 4–5 minutes per side). Drain on paper towels.
  4. Brush eggplant slices with olive oil and roast or grill until tender and slightly golden, about 10–12 minutes total.
  5. Place fried chicken cutlets in the baking dish. Top each with a slice of prosciutto, a slice of roasted eggplant, and mozzarella cheese.
  6. Spoon marinara sauce over the top of each stack and sprinkle with Parmesan cheese.
  7. Bake for 15–20 minutes, or until cheese is melted and bubbly.
  8. Garnish with fresh basil or parsley and serve warm, optionally over pasta or with crusty bread.

Notes

  • Use thin-sliced eggplant to ensure even roasting.
  • Lightly salt eggplant and let sit for 10 minutes to draw out bitterness before roasting.
  • Can be assembled ahead of time and baked just before serving.
  • For a low-carb version, skip the breading or serve without pasta.
