Chicken Sorrentino is a flavorful Italian-American dish featuring breaded chicken cutlets layered with prosciutto, eggplant, and melted mozzarella cheese, all topped with a rich marinara sauce. It’s a comforting, restaurant-style meal perfect for a special dinner.

- 4 boneless, skinless chicken breasts, pounded thin
- Salt and pepper, to taste
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup Italian breadcrumbs
- Vegetable oil, for frying
- 1 medium eggplant, sliced into 1/4-inch rounds
- Olive oil, for brushing
- 4 slices prosciutto
- 1 cup marinara sauce
- 1 cup shredded mozzarella or sliced fresh mozzarella
- 1/4 cup grated Parmesan cheese
- Fresh basil or parsley, for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Season chicken with salt and pepper. Dredge in flour, dip in beaten eggs, then coat in breadcrumbs.
- Heat vegetable oil in a skillet over medium heat. Fry chicken until golden brown on both sides (about 4–5 minutes per side). Drain on paper towels.
- Brush eggplant slices with olive oil and roast or grill until tender and slightly golden, about 10–12 minutes total.
- Place fried chicken cutlets in the baking dish. Top each with a slice of prosciutto, a slice of roasted eggplant, and mozzarella cheese.
- Spoon marinara sauce over the top of each stack and sprinkle with Parmesan cheese.
- Bake for 15–20 minutes, or until cheese is melted and bubbly.
- Garnish with fresh basil or parsley and serve warm, optionally over pasta or with crusty bread.
Notes
- Use thin-sliced eggplant to ensure even roasting.
- Lightly salt eggplant and let sit for 10 minutes to draw out bitterness before roasting.
- Can be assembled ahead of time and baked just before serving.
- For a low-carb version, skip the breading or serve without pasta.
