  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 pound cooked chicken breast, shredded
  • 1 chipotle pepper in adobo, minced (plus 1 tablespoon adobo sauce)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1 (15 oz) can diced tomatoes
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 cup chicken broth
  • Salt and pepper, to taste
  • 1 package Cheddar Bay biscuit mix (e.g., Red Lobster brand)
  • 1/2 cup shredded cheddar cheese
  • 4 tablespoons butter (for biscuit topping)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Heat olive oil in a large oven-safe skillet or Dutch oven over medium heat. Add onion and garlic and sauté until softened, about 4–5 minutes.
  3. Stir in shredded chicken, minced chipotle pepper, adobo sauce, cumin, and smoked paprika. Cook for 2 minutes to combine flavors.
  4. Add diced tomatoes, black beans, corn, and chicken broth. Bring to a simmer and cook for 5–7 minutes. Season with salt and pepper to taste.
  5. While the chili simmers, prepare the Cheddar Bay biscuit mix according to package instructions, mixing in the shredded cheddar cheese.
  6. Drop spoonfuls of biscuit dough evenly over the chili in the skillet.
  7. Transfer the skillet to the oven and bake for 15–20 minutes, or until biscuits are golden and cooked through.
  8. Melt butter and drizzle over baked biscuits if your biscuit mix includes a garlic butter topping packet.
  9. Let cool for 5 minutes before serving. Serve warm straight from the skillet.

Notes

  • For extra heat, add an additional chipotle pepper or a dash of hot sauce.
