- 1 pound cooked chicken breast, shredded

- 1/2 teaspoon smoked paprika
- 1 (15 oz) can diced tomatoes
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 cup chicken broth
- Salt and pepper, to taste
- 1 package Cheddar Bay biscuit mix (e.g., Red Lobster brand)
- 1/2 cup shredded cheddar cheese
- 4 tablespoons butter (for biscuit topping)
Instructions
- Preheat oven to 400°F (200°C).
- Heat olive oil in a large oven-safe skillet or Dutch oven over medium heat. Add onion and garlic and sauté until softened, about 4–5 minutes.
- Stir in shredded chicken, minced chipotle pepper, adobo sauce, cumin, and smoked paprika. Cook for 2 minutes to combine flavors.
- Add diced tomatoes, black beans, corn, and chicken broth. Bring to a simmer and cook for 5–7 minutes. Season with salt and pepper to taste.
- While the chili simmers, prepare the Cheddar Bay biscuit mix according to package instructions, mixing in the shredded cheddar cheese.
- Drop spoonfuls of biscuit dough evenly over the chili in the skillet.
- Transfer the skillet to the oven and bake for 15–20 minutes, or until biscuits are golden and cooked through.
- Melt butter and drizzle over baked biscuits if your biscuit mix includes a garlic butter topping packet.
- Let cool for 5 minutes before serving. Serve warm straight from the skillet.

- For extra heat, add an additional chipotle pepper or a dash of hot sauce.
- You can use rotisserie chicken for convenience.
