Chocolate and Espresso Babka Muffins combine the rich flavors of dark chocolate and bold espresso in a soft, swirled muffin inspired by traditional babka bread. These muffins are perfect for breakfast or an indulgent coffee break treat.

- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup milk
- 1/4 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1 tbsp instant espresso powder
- 1/2 cup dark chocolate chips
- 1/4 cup cocoa powder
- 1/4 cup brown sugar
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, combine milk, oil, eggs, vanilla extract, and espresso powder until well mixed.
- Pour wet ingredients into dry ingredients and stir until just combined.
- In a small bowl, mix cocoa powder, brown sugar, and chocolate chips.
- Fill each muffin liner halfway with batter, then sprinkle a spoonful of the chocolate-espresso mixture, and top with remaining batter.
- Using a toothpick or skewer, swirl the chocolate mixture into the batter to create a marbled effect.
- Bake for 18-22 minutes, or until a toothpick inserted comes out clean.
- Let cool before serving.
Notes
- For a stronger espresso flavor, add an extra teaspoon of espresso powder.
- Try using semi-sweet or bittersweet chocolate chips for varied sweetness.
- These muffins freeze well for up to 1 month.
