Description

Chocolate Chip Vanilla Custard Brioches, also known as Brioches Suisses, are soft, buttery French pastries filled with rich vanilla custard and studded with chocolate chips, perfect for a decadent breakfast or dessert.


Ingredients

  • 2 1/4 tsp active dry yeast
  • 1/4 cup warm milk
  • 3 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 tsp salt
  • 3 large eggs
  • 1/2 cup unsalted butter, softened
  • 1 cup vanilla custard (homemade or store-bought)
  • 1/2 cup chocolate chips
  • 1 egg (for egg wash)
  • Powdered sugar, for dusting

Instructions

  1. In a small bowl, dissolve yeast in warm milk and let sit for 5-10 minutes until foamy.
  2. In a large bowl, combine flour, sugar, and salt.
  3. Add eggs and yeast mixture to the dry ingredients and mix until dough forms.
  4. Gradually add softened butter and knead the dough until smooth and elastic, about 8-10 minutes.
  5. Cover dough and let rise in a warm place for 1 to 1.5 hours until doubled in size.
  6. Divide dough into 12 equal portions and roll each into a rectangle.
  7. Spread a tablespoon of vanilla custard and sprinkle chocolate chips over each rectangle.
  8. Roll up each rectangle tightly and place seam-side down on a baking sheet lined with parchment paper.
  9. Cover and let rise for another 30-45 minutes.
  10. Preheat oven to 375°F (190°C). Brush brioches with beaten egg.
  11. Bake for 18-22 minutes until golden brown.
  12. Let cool slightly, dust with powdered sugar, and serve warm.
