Chocolate Chip Vanilla Custard Brioches, also known as Brioches Suisses, are soft, buttery French pastries filled with rich vanilla custard and studded with chocolate chips, perfect for a decadent breakfast or dessert.

- 2 1/4 tsp active dry yeast
- 1/4 cup warm milk
- 3 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/2 tsp salt
- 3 large eggs
- 1/2 cup unsalted butter, softened
- 1 cup vanilla custard (homemade or store-bought)
- 1/2 cup chocolate chips
- 1 egg (for egg wash)
- Powdered sugar, for dusting
Instructions
- In a small bowl, dissolve yeast in warm milk and let sit for 5-10 minutes until foamy.
- In a large bowl, combine flour, sugar, and salt.
- Add eggs and yeast mixture to the dry ingredients and mix until dough forms.
- Gradually add softened butter and knead the dough until smooth and elastic, about 8-10 minutes.
- Cover dough and let rise in a warm place for 1 to 1.5 hours until doubled in size.
- Divide dough into 12 equal portions and roll each into a rectangle.
- Spread a tablespoon of vanilla custard and sprinkle chocolate chips over each rectangle.
- Roll up each rectangle tightly and place seam-side down on a baking sheet lined with parchment paper.
- Cover and let rise for another 30-45 minutes.
- Preheat oven to 375°F (190°C). Brush brioches with beaten egg.
- Bake for 18-22 minutes until golden brown.
- Let cool slightly, dust with powdered sugar, and serve warm.

- Use high-quality vanilla custard for the best flavor.
- You can substitute chocolate chips with chopped dark chocolate or raisins.
- Store leftovers in an airtight container and reheat gently before serving.
