Chocolate Covered Cherry Rice Krispies Treats are a fun twist on the classic marshmallow bars, featuring the sweet and tangy flavor of maraschino cherries mixed into gooey cereal treats, then topped with rich melted chocolate for a decadent finish.

- 6 cups Rice Krispies cereal
- 1 (10 oz) bag mini marshmallows
- 3 tbsp unsalted butter
- 1/2 cup chopped maraschino cherries (drained and patted dry)
- 1/2 tsp almond extract (optional, enhances cherry flavor)
- 1 cup semi-sweet chocolate chips
- 1 tsp coconut oil or butter (for smooth chocolate topping)
Instructions
- Grease a 9×13-inch pan or line it with parchment paper.
- In a large saucepan, melt the butter over low heat. Add the marshmallows and stir continuously until fully melted and smooth.
- Stir in the almond extract (if using) and fold in the chopped cherries.
- Remove from heat and immediately stir in the Rice Krispies cereal until evenly coated.
- Quickly press the mixture into the prepared pan using a greased spatula or wax paper. Flatten evenly.
- In a microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals, stirring between each until smooth.
- Spread the melted chocolate evenly over the top of the Rice Krispies mixture.
- Let cool at room temperature or refrigerate for 20–30 minutes until the chocolate is set.
- Cut into squares and serve.
Notes
- Be sure to pat the cherries dry to avoid excess moisture in the treats.
- Use dark or milk chocolate depending on your taste preference.
- Add chopped almonds or drizzle with white chocolate for an extra fancy touch.
- Store in an airtight container at room temperature for up to 3 days.
