Instructions
- In a bowl, whisk together heavy cream, sweetened condensed milk, cocoa powder, and peppermint extract until fully combined and slightly thickened. Add a drop or two of green food coloring if desired.
- Pour the mixture onto a frozen flat metal surface or baking sheet pre-frozen for several hours.
- Spread the mixture evenly into a thin layer using a spatula and sprinkle mini chocolate chips over the top.
- Freeze for at least 2–3 hours or until completely solid.
- Using a metal scraper or spatula, carefully scrape the ice cream into rolls by pushing forward at a consistent angle.
- Place rolls into a serving cup or bowl and top with crushed cookies, chocolate shavings, or extra chips if desired.
- Serve immediately for best texture.
