Description

Chorizo, Pumpkin & Caramelised Onion Hand-Pies are savory pastries filled with smoky chorizo, sweet roasted pumpkin, and rich caramelized onions, all wrapped in a flaky golden crust. Perfect for snacks, lunches, or party appetizers.


Ingredients

  • 1 tbsp olive oil
  • 1 onion, thinly sliced
  • 1/2 tsp sugar
  • 1 cup pumpkin, diced
  • 1 tsp olive oil (for roasting)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 oz (85g) chorizo, diced or crumbled
  • 1/2 cup grated cheese (cheddar or mozzarella)
  • 1 sheet puff pastry (or shortcrust pastry), thawed
  • 1 egg, beaten (for egg wash)
  • Optional: chopped fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Toss pumpkin cubes with 1 tsp olive oil, salt, and pepper. Roast on a baking tray for 20–25 minutes until tender and lightly golden. Set aside to cool.
  2. In a skillet, heat 1 tbsp olive oil over low heat. Add sliced onions and sugar. Cook slowly, stirring often, until onions are caramelized and deep golden (about 15–20 minutes).
  3. Add chorizo to the pan and cook for 5–6 minutes until browned. Combine with roasted pumpkin and caramelized onions. Let mixture cool, then mix in grated cheese.
  4. Roll out pastry and cut into circles or squares (about 4–5 inches wide). Place a spoonful of filling in the center of each piece.
  5. Fold over to form a hand-pie, pressing edges to seal. Crimp with a fork. Place on a lined baking sheet.
  6. Brush tops with beaten egg and cut a small steam vent in each pie.
  7. Bake for 20–25 minutes until golden brown and crisp. Serve warm or at room temperature.

Notes

  • Make ahead and freeze unbaked hand-pies; bake directly from frozen, adding a few extra minutes.
  • Swap pumpkin with sweet potato or butternut squash if preferred.
  • Delicious served with a yogurt dip or spicy tomato relish.
