- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper, to taste
- Optional: extra lime wedges for serving
Instructions
- In a bowl, whisk together the cilantro, lime juice, olive oil, garlic, cumin, chili powder, salt, and pepper to create the marinade.
- Place the flank steak in a resealable plastic bag or shallow dish and pour the marinade over it. Seal and refrigerate for at least 1 hour, or overnight for maximum flavor.
- Preheat your grill to medium-high heat. Remove the steak from the marinade and discard the excess marinade.
- Grill the steak for 4-5 minutes per side for medium-rare, or longer to your preferred doneness.
- Remove the steak from the grill and let it rest for 5 minutes before slicing it against the grain into thin strips.
- Serve with extra lime wedges, if desired, and enjoy!
