Description

This Classic Stovetop Beef Stew is a hearty, comforting dish filled with tender chunks of beef, potatoes, carrots, and a rich, flavorful broth slow-simmered to perfection.


Ingredients

  • 2 lbs beef chuck, cut into 1 1/2-inch cubes
  • 3 tbsp vegetable oil, divided
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 tbsp all-purpose flour
  • 4 cups beef broth
  • 1 cup red wine (optional, or additional broth)
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 2 bay leaves
  • 4 medium carrots, peeled and sliced
  • 3 medium potatoes, peeled and cut into chunks
  • 2 stalks celery, sliced
  • 1 cup frozen peas
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the beef with salt and pepper. Heat 2 tbsp oil in a large pot or Dutch oven over medium-high heat. Brown the beef in batches, adding more oil if needed. Remove and set aside.
  2. Reduce heat to medium, add onion and celery, and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  3. Stir in flour and cook for 1-2 minutes to remove raw taste.
  4. Slowly pour in beef broth and wine (if using), scraping up browned bits from the bottom of the pot. Add tomato paste, thyme, bay leaves, and browned beef.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 1 1/2 hours, stirring occasionally.
  6. Add carrots and potatoes and continue cooking for another 45 minutes until beef and vegetables are tender.
  7. Stir in peas and cook for 5 minutes. Discard bay leaves and adjust seasoning with salt and pepper.
  8. Garnish with fresh parsley before serving.

Notes

  • For a thicker stew, remove 1/2 cup of broth, mix with 1 tbsp flour, and stir back into the pot.
  • This stew tastes even better the next day as flavors meld together.
  • Serve with crusty bread for a complete meal.
