Description

Cowboy Cookie Bars are a deliciously chewy and hearty treat loaded with oats, chocolate chips, nuts, and coconut. These bars combine all the classic cowboy cookie flavors into an easy-to-cut dessert perfect for snacks or gatherings.


Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups old-fashioned rolled oats
  • 1 cup semisweet chocolate chips
  • 1 cup shredded sweetened coconut
  • 1 cup chopped pecans or walnuts

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, beat softened butter with brown sugar and granulated sugar until creamy and fluffy.
  4. Add eggs one at a time, beating well after each addition, then mix in vanilla extract.
  5. Gradually add dry ingredients to the wet ingredients, mixing just until combined.
  6. Fold in oats, chocolate chips, coconut, and nuts until evenly distributed.
  7. Spread the batter evenly into the prepared pan.
  8. Bake for 25–30 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  9. Allow to cool completely in the pan before lifting out and cutting into bars.

Notes

  • Use parchment paper to easily lift bars out without breaking.
  • Substitute nuts with your favorite variety or omit for a nut-free version.
  • Store bars in an airtight container at room temperature for up to 5 days.
  • For extra chewiness, slightly underbake the bars.
