Cowboy Cookie Bars are a deliciously chewy and hearty treat loaded with oats, chocolate chips, nuts, and coconut. These bars combine all the classic cowboy cookie flavors into an easy-to-cut dessert perfect for snacks or gatherings.

- 1 cup all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 1 cup unsalted butter, softened
- 1 cup packed brown sugar
- ½ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 cups old-fashioned rolled oats
- 1 cup semisweet chocolate chips
- 1 cup shredded sweetened coconut
- 1 cup chopped pecans or walnuts
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang for easy removal.
- In a medium bowl, whisk together flour, baking soda, and salt.
- In a large bowl, beat softened butter with brown sugar and granulated sugar until creamy and fluffy.
- Add eggs one at a time, beating well after each addition, then mix in vanilla extract.
- Gradually add dry ingredients to the wet ingredients, mixing just until combined.
- Fold in oats, chocolate chips, coconut, and nuts until evenly distributed.
- Spread the batter evenly into the prepared pan.
- Bake for 25–30 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Allow to cool completely in the pan before lifting out and cutting into bars.
Notes
- Use parchment paper to easily lift bars out without breaking.
- Substitute nuts with your favorite variety or omit for a nut-free version.
- Store bars in an airtight container at room temperature for up to 5 days.
- For extra chewiness, slightly underbake the bars.
