  • 1 package (9 oz) asparagus ravioli
  • 1/2 pound Italian sausage, casing removed
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup peas (fresh or frozen)
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Cook ravioli according to package instructions, typically for 3-4 minutes. Drain and set aside, reserving a little pasta water.
  2. While the ravioli cooks, heat olive oil in a large skillet over medium heat. Add the sausage and cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes.
  3. Add minced garlic to the skillet and sauté for 1 minute until fragrant.
  4. Add the peas to the skillet and cook for another 2 minutes until heated through.
  5. Pour in the heavy cream, bring to a simmer, and cook for 2-3 minutes until the sauce thickens slightly. Stir in Parmesan cheese and season with salt and pepper.
  6. Add the cooked ravioli to the skillet, tossing gently to coat in the sauce. If the sauce is too thick, add a bit of reserved pasta water to reach your desired consistency.
  7. Serve immediately, garnished with fresh parsley and extra Parmesan cheese if desired.
