- 1/2 pound Italian sausage, casing removed
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 cup peas (fresh or frozen)

- 1/4 cup grated Parmesan cheese
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions
- Bring a large pot of salted water to a boil. Cook ravioli according to package instructions, typically for 3-4 minutes. Drain and set aside, reserving a little pasta water.
- While the ravioli cooks, heat olive oil in a large skillet over medium heat. Add the sausage and cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes.
- Add minced garlic to the skillet and sauté for 1 minute until fragrant.
- Add the peas to the skillet and cook for another 2 minutes until heated through.
- Pour in the heavy cream, bring to a simmer, and cook for 2-3 minutes until the sauce thickens slightly. Stir in Parmesan cheese and season with salt and pepper.
- Add the cooked ravioli to the skillet, tossing gently to coat in the sauce. If the sauce is too thick, add a bit of reserved pasta water to reach your desired consistency.
- Serve immediately, garnished with fresh parsley and extra Parmesan cheese if desired.
