  • 1 lb boneless, skinless chicken thighs, cut into chunks
  • 2 tablespoons butter
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • For Dumplings:
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 2 tablespoons butter, melted

Instructions

  1. In a large pot, melt butter over medium heat. Add onion, carrots, and celery, cooking until softened.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Add chicken chunks, season with salt and pepper, and brown lightly.
  4. Sprinkle flour over the mixture and stir well to coat.
  5. Gradually add chicken broth, stirring constantly, then bring to a simmer.
  6. Pour in heavy cream and simmer for 10-15 minutes until stew thickens and chicken is cooked through.
  7. Meanwhile, prepare dumplings: in a bowl, mix flour, baking powder, and salt. Stir in milk and melted butter until combined.
  8. Drop spoonfuls of dumpling batter onto the simmering stew, cover, and cook for 15 minutes without lifting the lid to allow dumplings to steam and puff up.
  9. Serve hot, garnished with fresh herbs if desired.

Notes

  • For a lighter version, use half-and-half instead of heavy cream.
