Creamy Chicken Stew and Dumplings is a comforting, hearty dish featuring tender chicken simmered in a rich, creamy stew with fluffy dumplings cooked on top. Perfect for cozy dinners and cold days.
Ingredients
Scale
- 1 lb boneless, skinless chicken thighs, cut into chunks
- 2 tablespoons butter
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 3 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons all-purpose flour
- Salt and pepper to taste
- For Dumplings:
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 2 tablespoons butter, melted
Instructions
- In a large pot, melt butter over medium heat. Add onion, carrots, and celery, cooking until softened.
- Add garlic and cook for 1 minute until fragrant.
- Add chicken chunks, season with salt and pepper, and brown lightly.
- Sprinkle flour over the mixture and stir well to coat.
- Gradually add chicken broth, stirring constantly, then bring to a simmer.
- Pour in heavy cream and simmer for 10-15 minutes until stew thickens and chicken is cooked through.
- Meanwhile, prepare dumplings: in a bowl, mix flour, baking powder, and salt. Stir in milk and melted butter until combined.
- Drop spoonfuls of dumpling batter onto the simmering stew, cover, and cook for 15 minutes without lifting the lid to allow dumplings to steam and puff up.
- Serve hot, garnished with fresh herbs if desired.
Notes
- For a lighter version, use half-and-half instead of heavy cream.
- Add peas or corn to the stew for extra veggies.
- Be careful not to lift the lid while dumplings are cooking to ensure they steam properly.
