- 2 lbs baby potatoes, halved
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika (optional)
- 1 tbsp chopped parsley (optional, for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- Toss halved potatoes with olive oil, salt, pepper, and paprika (if using) and spread on a baking sheet. Roast for 25–30 minutes or until golden and fork-tender.
- While potatoes roast, heat a saucepan over medium heat. Add a bit of olive oil and sauté the garlic for 1 minute until fragrant.
- Pour in the heavy cream and bring to a gentle simmer.
- Stir in Parmesan cheese and cook until melted and the sauce thickens slightly, about 2–3 minutes.
- Remove roasted potatoes from the oven and transfer to a serving dish.
- Pour the creamy garlic sauce over the potatoes and gently toss to coat.
- Garnish with chopped parsley and serve warm.
Notes
- For a deeper flavor, roast the garlic with the potatoes and mash it into the sauce.
- Swap Parmesan with Gruyère or white cheddar for a cheesy twist.
- These potatoes reheat well and make a great leftover side.
