- 1 tablespoon olive oil
- 2 tablespoons butter
- 2 cloves garlic, minced
- 10 oz mixed mushrooms (cremini, shiitake, oyster), sliced
- 1 tablespoon white miso paste
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Salt and black pepper to taste
- Fresh parsley or chives, chopped (for garnish)
Instructions
- Cook the pasta according to package instructions. Reserve 1/2 cup of the pasta water and drain the rest.
- In a large skillet over medium heat, add olive oil and butter. Once melted, sauté garlic for 1 minute until fragrant.
- Add mushrooms and cook for 6–8 minutes until golden brown and tender.
- Reduce heat to low and stir in the miso paste until it dissolves into the mushrooms.
- Add heavy cream and Parmesan cheese. Stir until the sauce is smooth and creamy.
- Add the cooked pasta to the skillet and toss to coat. Use reserved pasta water as needed to loosen the sauce.
- Season with salt and pepper to taste.
- Serve warm, garnished with fresh parsley or chives.
