Description

Ingredients

  • 8 oz pasta (spaghetti, linguine, or fettuccine)
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 10 oz mixed mushrooms (cremini, shiitake, oyster), sliced
  • 1 tablespoon white miso paste
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh parsley or chives, chopped (for garnish)

Instructions

  1. Cook the pasta according to package instructions. Reserve 1/2 cup of the pasta water and drain the rest.
  2. In a large skillet over medium heat, add olive oil and butter. Once melted, sauté garlic for 1 minute until fragrant.
  3. Add mushrooms and cook for 6–8 minutes until golden brown and tender.
  4. Reduce heat to low and stir in the miso paste until it dissolves into the mushrooms.
  5. Add heavy cream and Parmesan cheese. Stir until the sauce is smooth and creamy.
  6. Add the cooked pasta to the skillet and toss to coat. Use reserved pasta water as needed to loosen the sauce.
  7. Season with salt and pepper to taste.
  8. Serve warm, garnished with fresh parsley or chives.
