- 1 tbsp olive oil
- 1 pound boneless, skinless chicken breast, diced
- 8 oz smoked sausage, sliced
- 2 garlic cloves, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 8 oz penne or rotini pasta (uncooked)
- 1 1/2 cups shredded pepper jack cheese
- 1/2 tsp paprika
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium heat. Add diced chicken and cook until browned and cooked through. Remove and set aside.
- Add sausage to the same skillet and cook until lightly browned. Add minced garlic and cook for 30 seconds.
- Return the chicken to the pan. Pour in chicken broth and heavy cream, then stir in uncooked pasta, paprika, salt, and pepper.
- Bring to a boil, then reduce heat to a simmer. Cover and cook for 12–15 minutes, stirring occasionally, until the pasta is tender.
- Stir in shredded pepper jack cheese until melted and creamy.
- Garnish with chopped parsley and serve hot.
Notes
- Adjust the spice level by adding crushed red pepper flakes or using milder cheese.
- Can be made ahead and reheated with a splash of broth or cream.
- Try smoked gouda or Monterey Jack as a variation on the cheese.
