- 1 pound large pasta shells
- 1 pound medium shrimp, peeled and deveined
- 2 cups chopped spinach
- 1 cup sliced mushrooms
- 2 cloves garlic, minced
- 2 tablespoons butter
- 1 1/2 cups heavy cream
- 1/2 cup Parmesan cheese, grated
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
Instructions
- Cook pasta shells according to package instructions. Drain and set aside.
- Meanwhile, in a large skillet over medium heat, melt butter and add garlic, mushrooms, and shrimp. Season with Italian seasoning, salt, and pepper.
- Cook for 3-4 minutes until shrimp are pink and opaque and mushrooms are tender.
- Add heavy cream and Parmesan cheese. Simmer for 2-3 minutes until sauce thickens.
- Stir in chopped spinach and cook for 1-2 minutes until wilted.
- Add the cooked shells to the skillet and toss to combine.
- Serve immediately with additional Parmesan if desired.
Notes
- Add a pinch of red pepper flakes for a bit of heat.
- For a lighter sauce, you can substitute heavy cream with half-and-half.
- Pair with a crispy green salad or garlic bread.
