Instructions
- Heat a nonstick skillet over medium heat and add the butter or oil.
- Sprinkle shredded cheese in a small circle directly onto the pan to form a cheese nest.
- Crack the eggs directly over the cheese and season with salt and pepper.
- Cover with a lid and cook for 2-4 minutes, until the whites are set and the cheese is golden and crispy.
- Carefully remove the eggs using a spatula and place them over toast, rice, or noodles.
- Drizzle generously with chili oil and garnish with chopped scallions or herbs if desired.
